Pico is one of those things you don’t really need a recipe for, you know the ingredients just by looking at it. I enjoy pico more than salsa…it just tastes so fresh and really celebrate the ingredients.
This version includes jicama which is a root vegetable tastes slightly sweet and starchy. It is described as tasting like a cross between an apple and a water chestnut. It is often sliced and served with lime juice and chili powder.
Jicama adds a nice crunch to this pico and can be used anywhere you’d use pico. I would eat it with tortilla chips, tacos, or over mild fish like cod.
3 tomatoescored and chopped
1 cup jicamacubed
1 tbsp cilantrochopped
1 tsp salt
1 tbsp lime juice
2 tbsp red onion
1 tbsp jalapeno optional finely diced
