asparagus salad with lemon vinaigrette

This salad is just sooo pretty. It is extremely quick and easy to prepare and looks very impressive when it’s complete.

My usual asparagus side dish is roasted in the oven with garlic, salt and pepper. This bright salad is a nice change from roasted veggies.

Yields1 Serving

 1 bunch asparagusabout two cups
 ½ cup radish
 2 green oniontops only
Lemon vinaigrette
 2 tbsp olive oil
 1 tbsp red wine vinegar
 1 tbsp lemon juice
 salt and pepper

Fill a large bowl with water and ice and set aside. Add asparagus to boiling water for about 2 minutes. Remove asparagus and put directly into ice water bath to stop cooking.

Cut asparagus into bite size pieces. Thinly slice radish and greens tops of the green onion.

To make dressing combine 1 tbsp lemon juice, 1 tbsp red wine vinegar, 2 tbsp olive oil, and salt and pepper to taste

Arrange asparagus and radish on a serving dish, drizzle with dressing and sprinkle with sliced green onions
