I love bowl meals because you get a little bit of everything.Bibimbap is a Korean dish that translates to “mixed rice”. It typically includes rice, veggies, and beef bulgogi.

This bibimbap bowl is a perfect way to use up some leftovers. I made this recipe using leftover beef from my korean beef bowls. I also used leftover roasted brussels sprouts , asian stir fried mushrooms, and homemade pickled onion. I sliced up some fresh cucumber and carrots and made a brand new meal! Just throw an egg on top!

 ¼ cup korean ground beef
 1 large egg
 ¼ carrotsjulienne
 ½ cup roasted brussels sprouts
 ¼ cup asian stir fried mushrooms
 ¼ cup cucumberthinly sliced
 1 cup cooked white rice
 1 green oniongreen only
 1 tsp sesame seeds

Fry one large egg sunny side up.

Add 1 cup warm white rice to a bowl. Top rice with korean ground beef, carrots, pickled onion, asian mushrooms, roasted brussels sprouts, and a fried egg. Top with green onions and sesame seeds.
