This is the quickest dish to throw together on a weeknight. It comes together in just a few minutes since angel hair pasta cooks so quickly. You can make the sauce while your pasta is boiling and your meal will be ready in less than 15 minutes!
I think artichoke and capers are flavors you really love…or you don’t. I don’t think there is much of a middle ground there.
Cook 8 oz of angel hair pasta according the package instructions.
In a saute pan, heat 1 tbsp olive oil and 4 tbsp butter over medium high heat. Add 4 tbsp lemon juice, 2 tsp lemon zest, 1/4 cup capers, and 2 cups artichoke. Reduce heat to low and allow to simmer for 5 minutes.
Combine pasta with lemon butter sauce. Top with 2 tbsp grated parmesan and 2 tbsp parsley.
