sweet potato bites

I used to hate sweet potatoes…now they are one of my favorite foods. I had only been exposed to the baked sweet potatoes you eat at thanksgiving..you know the ones with sugar, topped with more sugar in the form of marshmallows. Yuck.

When I discovered savory sweet potatoes my opinion changed completely. All they needed was a little garlic and salt! We have roasted sweet potatoes weekly at my house, but these sweet potato bites are fun when you’re looking for a fancy snack or light meal.
