 4 yellow peachessliced
 2 cups varied tomatoessliced
 ¼ cup fresh basil leaves
 2 tbsp Olive oil
 1 tbsp apple cider vinegar
  tsp cayenne pepper
 salt and pepper

Place sliced tomatoes and peaches in a large bowl.

summer peach and tomato salad

This salad really celebrates summer by featuring two in season fruits: peaches and tomatoes. It is so simple that you can just toss it together right before serving and it is a nice change from your typical lettuce salad.

To add some variety I used yellow and white peaches. As for the tomatoes, I used baby heirloom and vine on tomatoes. It is dressed simply in olive oil, apple cider vinegar, cayenne, salt, pepper and finished with fresh basil. You can definitely skip the cayenne but I think it really brightens things up! I paired mine with grilled pork chops for a perfect summer meal.

Add your own spin by adding feta or goat cheese, shallot, or pecan.
