In my opinion, mimosas exist only to give you a reason to drink early in the day…that works for me!
Living in texas grapefruit are abundant (apparently it is even our state fruit!). I used to live in illinois and the grapefruit just weren’t as good. The standard orange mimosa is good…but I think this version is something special.
I’m not a fan of overly sweet mimosas so I don’t add any simple syrup to this recipe but I know grapefruit can be a little tart for some people. If you want a little extra sweetness you can use premade grapefruit juice or just add a little simple syrup (equal parts water and white sugar).
add 2oz of fresh grapefruit juice to a champagne flute. (If your grapefruit is too tart or you like a sweeter mimosa add 1 oz simple syrup)
top with 6oz champagne
garnish with fresh rosemary
