meatball salad

 1 lb ground beef
 2 tbsp fresh parsley
 ½ cup parmesan cheesedivided
 2 eggs
  cup almond flour
 ¼ tsp garlic powder
 1 tsp italian seasoning
 4 oz mozzarella
 1 cup pasta sauce
 2 bags spring mix
 1 cup grape tomatoes
 1 tbsp olive oil
 additional parsley for garnish

preheat oven to 350 degrees

In a bowl combine 1 lb ground beef, 2 tbsp parsley, 2 eggs, 1/4 cup parmesan cheese, 1/3 cup almond flour, 1 tsp italian seasoning

form into golf ball sized meatballs. Heat a pan over medium high heat. Add 1 tbsp olive oil. Brown meatballs in pan, turning to brown each side. About 5-7 minutes or until all sides are browned.

transfer meatballs to a baking dish. Top with 1 cup pasta sauce. Cook in 350 degree oven for about 20 minutes or until meatballs are cooked through.

Top each meatball with mozzarella and put back in the oven for about 3 minutes, or until mozzarella is melted.

Add spring mix and tomatoes to a bowl, spoon tomato sauce and meatballs over the salad. Sprinkle with parsley and parmesan.
