 8 oz chicken breast
 ¼ cup black olivessliced
 ¼ cup green olives
 1 orangepeeled and cut into segments
 ¼ cup slivered almonds
 4 cups spring mix
dressing
 ½ tbsp dijon mustard
 1 tbsp apple cider vinegar
 2 tbsp olive oil
 salt and pepper

Peel orange and cut into segments. Thinly slice olives.

Heat grill to medium high. Grill chicken 5-7 minutes, flip and grill an additional 5-7 minutes or until it had reached an internal temperature of 165 degrees. Slice chicken into strips

In a small bowl combine 2 tbsp olive oil, 1 tbsp apple cider vinegar, 1/2 tbsp dijon mustard. Season with salt and pepper as desired.

Toss 4 cups spring mix, 1/2 cup sliced olives, and 1/4 cups slivered almonds. Top with chicken and drizzle with dressing.
