garlic green beans with pine nuts

 1 lb green beans
 ¼ cup pine nuts
 2 tbsp olive oil
 1 clove garlicminced
 1 tbsp lemon zest
 1 tbsp fresh chopped parsley

Add pine nuts to clean dry pan. Toast over medium heat for about 3 minutes or until golden. Remove from pan and reserve for later use.

Bring a large pot of water to a boil. Add green beans and cook until tender about 5-10 minutes and drain.

In a large saute pan add 2 tbsp olive oil over medium heat. Add minced garlic and cook for about 1 minute. Add green beans, 1 tbsp parsley, 2 tbsp fresh grated parmesan cheese, and toasted pine nuts. Remove from heat, top with 1 tbsp lemon zest.

Cook beans in a 4-quart saucepan of boiling salted water until just tender, about 5 minutes, then drain well in a colander. Transfer to a bowl and toss with nuts, parsley, zest, oil, and salt and pepper to taste.
