Rice paper rolls filled with fresh crunchy vegetables and herbs. I used avocado, purple cabbage, cucumber, carrots, red and orange bell peppers, and cilantro. I chose to go strictly veggies..but you can add tofu, chicken, or shrimp for some protein.

- vermicelli noodles
- mango
- radish
- lettuce
- green onion
- jalapeno
Fill a large pot with warm water. Submerge rice paper just until it becomes pliable, remove and place on flat rolling surface. Arrange desired amount of ingredients in center of roll. Wrap tightly around, fold sides in and finish rolling.
Serve with your favorite peanut sauce
