fresh citrus salad with avocado and chives

Avocado and grapefruit is one of my favorite combos. In addition to grapefruit, this salad has cara cara and navel oranges. You can use any variety of orange or grapefruit that is in season or available in your area.

I supremed the citrus which is a way to remove the fruit from the membranes that really lets it shine but its not necessary if you don’t mind the membrane.

I made a super simple vinaigrette

Yields1 Serving

 4 cups spring mix lettuce
 1 navel orangesupremed
 1 cara cara orangesupremed
 1 grapefruitsupremed
 1 avocadocubed
 1 tbsp chivessliced fine
 ¼ cup chopped pecanstoasted
Dressing
 1 tbsp olive oil
 ½ tbsp red wine vinegar
 ½ tsp dijon mustard
 ½ tsp honey
 1 pinch salt
 1 pinch black pepper
 1 pinch garlic powder

Chop and toast pecans. While cooling, arrange lettuce, avocado, and supremed citrus. Top with desired amount of chives, pecans and toss with dressing.

There may be leftover dressing, dress according to personal preference.
