cheesey spinach spaghetti squash

 1 spaghetti squash
 2 tbsp chive and onion cream cheese
 ½ cup shredded mozzarella
 ¼ cup fresh grated parmesan
 1 cup spinach
 ½ cup milk

Preheat oven to 400 degrees. Cut spaghetti squash in half lengthwise. Use a spoon to scoop out pulp and seeds.

Drizzle insides of spaghetti squash with a tsp of olive oil. Season with a pinch of salt and pepper. place spaghetti squash cut side down on cookie sheet or baking dish. Roast for about 40 minutes or until tender.

When squash has about 5 minutes left start the spinach cheese sauce. In a saucepan over medium heat add 1/2 cup milk, 1 cup spinach, 1/2 cup mozzarella, 1/4 cup parmesan, and 2 tbsp cream cheese. Stir until cheese is melted and ingredients are combined.

When squash is done, use a fork to break apart the strands of squash. In a large bowl combine spaghetti squash and spinach cheese sauce.

Spoon squash and cheese sauce into a baking dish. Bake in 400 degree oven for about 15 minutes.

To serve sprinkle with additional grated parmesan and fresh parsley.
