A low carb treat that is as fun to make as it is to eat!
In this recipe I chose to simmer the jalapenos to reduce their spice level and to ensure they were nice and tender after baking. This is definitely optional but I like to do it so I don’t end up with crunchy super spicy jalapenos.
Preheat oven to 400 degrees. Cut jalapenos in half. Chop cilantro.
Remove core and seeds of jalapenos
**this step is optional, it will remove some heat from the jalapenos and help soften them up** Add 1 cup water to a large pan. Add jalapeno halves and simmer over medium heat for 5 minutes. Remove from heat and strain.
Mix together 8oz of cream cheese, 1/2 cup shredded cheddar, 1 tbsp chopped cilantro, 1/2 garlic powder, and salt and pepper
Spoon cheese mixture into jalapeno halves
Wrap 1 piece of bacon around each stuffed jalapeno half
Place bacon wrapped jalapenos on a baking pan covered in foil. Cook in oven for 15-20 minutes or until bacon is crispy
