When we cook steak in this house it might be on the grill, or in a cast iron, or even with our sous vide. We love a good steak, so the thought of chopping up a perfectly good strip steak hurt my soul a little bit. I realize that not everyone has the interest or tools to cook a perfect steak, so this recipe is a little more accessible. It takes one pan, and you end up with a giant meal of herb buttered steak and potatoes.
Brussel sprouts or asparagus would be great green additions to this heart meal.
Cut baby potatoes in half. Cut strip steak into about 1 inch cubes, season with salt and pepper.
Heat 1 tbsp olive oil and 1 tbsp butter over medium high heat. Add sprigs of rosemary and thyme to oil/butter mixture. Add baby potatoes, season with salt, pepper, and 1/2 tsp garlic powder. Cook for about 15 minutes or until fork tender and golden brown. Stir frequently to make sure potatoes brown on all sides. Remove from pan, set aside.
Increase heat to high, if needed add additional 1 tbsp olive oil to pan. If there is enough left in the pan from the potatoes skip this step.
Add steak pieces to pan, allow to sear about 1 minute. Flip steak pieces, cook an additional minute stir frequently to ensure steak is seared on all sides. Remove from heat
Add potatoes back into the pan with the steak pieces, toss them together.
Garnish with parsley and serve.
