If you are a fan of sushi you absolutely have to try poke. Poke is a hawaiian dish that is made of raw tuna tossed in a soy sauce based marinade. The dish has skyrocketed into popularity recently, there are poke shops popping up all over.

I am a raw tuna fanatic but not everyone has easy access to sushi grade tuna. I decided to see how I could adapt this meal while still producing the same craveworthy flavors. I saw a vegan poke recipe that subbed tomato for tuna and I decided to give it a whirl. Tomato is a surprisingly good replacement for tuna in this recipe! If you have access to sushi grade tuna, you can make this recipe exactly as is, just swap out the tomatoes for tuna.

I like to do a combo of rice and spring mix as a base, and a lot of raw crunchy veggies to add texture. One of the shops near me even offers crushed hot cheetos as a topping…I have to say it was delicious! Other topping ideas: mango, pineapple, seaweed salad, cabbage, ginger etc!

 1 cup tomato (or sushi grade ahi tuna)seeds removed
 1 cup edamame
 ½ cup radishsliced
 ½ avocadosliced
 1 cup cooked white rice
 2 cups spring mix
 ½ cup carrotssliced
 ½ cup cucumbersliced
 2 green onionsliced tops only
 slice jalapenooptional
 1 tbsp sesame seeds
 2 tbsp cilantro

 ½ cup soy sauce
 1 tbsp sesame oil
 1 tsp rice vinegar
 1 pinch red pepper flakes
 ¼ tsp ginger
spicy mayo
 2 tbsp mayo
 2 tbsp sriracha
 sesame oil

Cut tomatoes into bit sized pieces, discard seeds.

Mix 1/2 cup soy sauce, 1 tbsp sesame oil, 1 tbsp rice vinegar, 1/4 tsp ginger, and desired amount of red pepper flakes. Add chopped tomato or ahi tuna. Allow to marinate for about 30 minutes.

Fill bowl with 1/2 cup white rice and 1 cup spring mix. Add 1/4 sliced avocado, 1/2 cup edamame, 1/4 cup carrots, 1/4 cups cucumber, 1/4 cups radish, 1 tbsp cilantro, a few slices of jalapeno if you like spice. Top with 1/2 cup marinated tomatoes (or ahi tuna), sprinkle with 1/2 tbsp sesame seeds and sliced green onion.

Mix 2 tbsp mayo, 2 tbsp sriracha, and a couple drops of sesame oil. Drizzle over bowl after it is assembled.
