This is such a quick easy summer recipe. It is spicy, light, and bright. It would make a great appetizer, or a quick weeknight meal. Make it a meal by serving with rice and veggies. The shrimp only needs to marinade for about 15 minutes and it is ready to toss on the grill. If you aren’t a fan of spice you can reduce or just skip the cayenne all together!
This is a very versatile recipe.. you could easily cook this inside without the skewers on the stove top or in the oven.
If baking in the oven: 425 for 6-8 minutes or until opaque
If using the stovetop: saute over medium high heat for 6 minutes or until opaque
If using wooden skewers, soak in water before grilling.
Combine olive oil, salt, pepper, garlic, cayenne, lime juice, cilantro, thyme, paprika, and onion powder. Add shrimp to marinade and let sit for about 15 minutes.
Heat grill to high. While grill is heating place shrimp on skewers.
Grill 2-3 minutes per side or until shrimp is opaque. Be careful not to overcook!
