rosemary roasted chicken with sweet potatoes

Sometimes you need a dinner that comes together with very little effort. This roasted chicken can be tossed in the oven and left to cook. You end up with a homey meal that is quick enough for a weeknight.

Fresh herbs definitely make this chicken recipe feel a little more special. rosemary, thyme, or oregano. Dry herbs would also work just fine!

 2 boneless skinless chicken breast
 2 cups cubed sweet potatoes
 2 tbsp olive oil
 ½ tsp garlic powder
 sprigs of rosemary
 salt
 pepper
 10 grape tomatos

Preheat oven to 400 degrees. In a small baking dish lay chicken breast, surround chicken with cubed sweet potatoes. Drizzle olive oil over chicken and sweet potatoes. Tear sprigs of rosemary and place in baking dish. Season with salt, pepper and 1/2 tsp of garlic powder.

Bake for 25 minutes at 400 degrees, add grape tomatoes. Return to oven for about 5 more minutes or until tomatoes are splitting and chicken has reach internal temperature of 165 degrees.
