 4 cups corn (fresh, frozen or canned!)
 1 tbsp olive oil
 2 tbsp mexican crema
 2 tsp mayonaise
 1 tsp chili powder
 1 tsp fresh cilantro
 ¼ tsp cayenne pepper
 2 tbsp cotija cheese
 sliced lime

Heat oil in a large skillet over medium heat. Add corn and cook until heated through about 5 minutes.

Mix crema, mayonnaise, chili powder, cayenne, cilantro and cotija cheese. Add corn and stir to combine all ingredients

Serve warm and garnish with slice of lime
