 1 orange bell pepperjulienne
 1 red bell pepperjulienne
 ½ cup fresh cilantro
 1 cucumberjulienne
 1 cup carrotsmatchstick/julienne
 1 avocadothinly sliced
 ½ head of purple cabbage
 rice paper rolls

Fill a large pot with warm water. Submerge rice paper just until it becomes pliable, remove and place on flat rolling surface. Arrange desired amount of ingredients in center of roll. Wrap tightly around, fold sides in and finish rolling.

Serve with your favorite peanut sauce
