 4 blood oranges
 1 large avocado
 1 tbsp red onionfinely diced
 ¼ cup cilantro
 ¼ cup pepitas
vinaigrette dressing
 1 tbsp lime juice
 1 tbsp olive oil
 1 tbsp red wine vinegar
 1 pinch salt
 ½ tsp honey

Arrange slices of blood orange and avocado. Sprinkle with 1/4 cup pepitas, 1 tbsp finely diced red onion, and 1/4 cilantro leaves.
