Dessert should always include chocolate, but I wanted to make something festive and fall-ish…so I just combined the two. I made a very basic brownie recipe and just added a layer of pumpkin in the middle. This is the perfect thanksgiving dessert recipe, especially if you are looking for an alternative to pie.
Warning: this makes a TON of brownies…you can easily half the recipe and make it in an 8×8 pan.
Preheat oven to 350 degrees. Grease a 9x13 baking dish
In a large bowl combine 1 cup softened butter, 4 eggs, 2 cups of white sugar, and 1 tsp vanilla. Stir until well combined
Add 2/3 cups cocoa powder, 1 cup flour, 1/2 tsp salt, and 1/2 tsp baking powder. Stir until well combined
In a small bowl combine 14oz can of pumpkin, 1 tbsp brown sugar, and 1 tbsp pumpkin pie spice.
Spread 1/2 of the brownie mixture into a greased 9x13 pan. Top with pumpkin mixture and spread evenly. Top with remaining 1/2 of brownie mixture.
Bake about 30-40 minutes or until an inserted toothpick comes out clean.
