I use the word “pizza” loosely in this title…maybe more of a flatbread? Who knows, it’s delicious though!
I am from chicago where deep dish pizza is king… but I am really not a pizza lover. I am much more a fan of sauceless pizzas loaded with veggies. These little pizzas can be topped with so many different things. Veggies, herbs, meats, different kinds of cheese…the possibilities are endless.
I get my mini naan bread from Aldi, they are the perfect size for a snack sized pizza. I also use these for my mediterranean meals, they go great with greek chicken couscous bowls.
Preheat oven to 400 degrees. Slice tomatoes into quarters, slice prosciutto in half or quarters.
Arrange mozzarella on top of naan bread, bake for about 7 minutes or until cheese has melted
Top with prosciutto, spinach, and tomatoes. Drizzle with balsamic vinegar. Finish with fresh cracked black pepper.
