perfect grilled NY strip steak

Sharing a steak with my husband is one of my favorite things. We pick out a gorgeous steak, almost always a NY strip, and grill it together. I like this particular cut because it is very tender and not too fatty. This recipe will work with other steak cuts as well, but you may have to adjust the times a bit.

I do also love a steak cooked on a charcoal grill or inside on a cast iron, but this recipe uses a gas grill. I like cooking on a gas grill because it is easy to control the temperature and requires less prep than a charcoal grill. A screaming hot grill will help get a nice char on the outside of your steak.

To achieve a perfect medium rare, pull your steak off the grill at 125 degrees. You will tent it with foil and rest it for about 10 minutes, this will allow the steak to finish cooking. Cutting too soon will cause you to lose all the juices and result in a dry steak, so as tempted as you may be…don’t slice it right away!

 1 NY strip steak2 inches thick
 salt and pepper

Start with a 2in thick NY strip steak

Season very liberally with kosher salt and pepper on all sides

Set your gas grill to high. Once it has reached ~500 degrees you're ready to start cooking.

Set steak on grate cook for 2.5 minutes, turn a quarter turn and cook for another 2.5 minutes. This will create the gorgeous grill marks.

Flip steak over, cook for 2.5 minutes. Turn a quarter turn and cook for another 2.5 minutes.

Check temperature of steak, remove at 125 degrees for medium rare or 135 for medium. Tent loosely with foil and allow to rest for about 10 minutes before serving. This will also allow the steak to finish cooking.
