mushroom cranberry salad

Nothin’ wrong with a really simple salad. Just a few ingredients with a really punchy vinaigrette dressing…lovely as a side or a light lunch.

I like my dressing really tangy, you can mellow it out by adding more sugar and olive oil.

 2 5oz bags of spring mix
 8 oz button mushroom
 ½ cup dried cranberries
 ½ cup red onion
 4 oz goat cheese
dressing
 3 tbsp olive oil
 2 tbsp red wine vinegar
 2 tsp sugar
 ¼ tsp pepper
 ½ tsp salt
 1 tsp dijon mustard
  tsp garlic

Mix 3 tbsp olive oil, 2 tbsp red wine vinegar, 2 tsp sugar, 1/4 tsp pepper, 1/2 tsp salt, 1/8 tsp garlic, and 1 tsp dijon mustard

In a large bowl combine 2 5oz bags of spring mix, 8oz sliced button mushrooms, 4 oz crumbled goat cheese, 1/2 cup dried cranberries and 1/2 cup sliced red onion.

Toss with desired amount of dressing. **dressing recipe will make more than you need, be careful not to over dress.
