Salads can be a little dainty..and not always the most filling. Not this salad! This is definitely a meal salad.
These meatballs would be great over pasta or on a sub but I was going for low carb, hence meatball salad. I also used almond flour in place of breadcrumbs as a binder to keep the carbs low.
I chose not to dress the salad greens, I spooned extra tomato sauce and it worked nicely as a dressing. I could see a tangy vinaigrette being a great option as well.
preheat oven to 350 degrees
In a bowl combine 1 lb ground beef, 2 tbsp parsley, 2 eggs, 1/4 cup parmesan cheese, 1/3 cup almond flour, 1 tsp italian seasoning
form into golf ball sized meatballs. Heat a pan over medium high heat. Add 1 tbsp olive oil. Brown meatballs in pan, turning to brown each side. About 5-7 minutes or until all sides are browned.
transfer meatballs to a baking dish. Top with 1 cup pasta sauce. Cook in 350 degree oven for about 20 minutes or until meatballs are cooked through.
Top each meatball with mozzarella and put back in the oven for about 3 minutes, or until mozzarella is melted.
