carne asada tacos

This is my go to crowd pleaser recipe. I have been making these tacos for about 10 years and I don’t think I will ever get sick of them. This may not be the most traditional carne asada recipe, but I promise you will love it.

I prefer skirt steak but you can use a different cut of meat if you like and the results will be similar. I think skirt steak has a nice fattiness and flavor but it can be tough..this marinade takes care of that though! As long as skirt steak is marinated and sliced against the grain it will come out very tender.

Finish these babies up with some queso fresco, cilantro and avocado!

Yields1 Serving

 1 lb skirt steak
 12 oz pickled jalapenos (using liquid only)
 sprigs fresh cilantro
 ½ tsp garlic powder
 juice of 1 lime
 salt
 black pepper
 corn tortillas
 queso fresco
 1 large avocado

Roughly chop a few sprigs of cilantro. In a glass pan place skirt steak, top with the liquid from a 12oz can of pickled jalapenos. Add 1/2 tsp garlic powder, 1/4 cup lime juice, chopped cilantro, salt and pepper. Marinate for at least 30 minutes and up to 8 hours.

Heat grill to medium high. Grill skirt steak two minutes and rotate cooking another two minutes (don't flip just yet!). Flip steak and cook for two minutes, rotate and cook an additional two minutes. Check temperature of steak, remove at 125 degrees for medium rare. Loosely tent steak for 5-10 minutes. Slice against the grain.

Putting it all together

Heat corn tortillas on grill or over gas burner on stove. Add thinly sliced skirt steak, top with fresh cilantro, queso fresco, and sliced avocado. Serve with lime wedges if desired.
