Another quinoa recipe!
Caprese salad is so simple and delicious but I find myself look for ways to bulk it up to make it a meal and not a side. Sometimes I add prosciutto or pasta, this time it’s quinoa.
Just add the classic caprese ingredients: mozzarella, basil, tomatoes, olive oil, balsamic vinegar, salt and pepper! Couldn’t be easier!
Bring 2 cups of water to a boil in a saucepan. Stir in quinoa, cover and reduce heat to low. Simmer for 15-20 minutes or until all liquid has evaporated. Remove from heat and fluff with a fork.
Combine quinoa, mozzarella pearls, tomatoes, basil, olive oil, and balsamic vinegar. Season with salt and pepper.
