braised red cabbage

Cabbage is so cheap and easy to make. I tend to use it raw in salads but this is my favorite way to cook red cabbage. My background is polish and this braised red cabbage is one of the few polish recipes I know how to make. It takes barely any effort and is a great served alongside pork, or mashed potatoes. It’s tangy, sweet and helps add brightness to your plate.

Some recipes use brown sugar, I think the apple adds enough sweetness.

Yields1 Serving

 2 tbsp butter
 ½ small yellow onion
 4 cups shredded red cabbage
 1 thinly sliced apple
 2 tbsp apple cider vinegar
 2 tbsp water
 salt and pepper

Over medium heat add butter and onion to large sautee pan. Cook for about 5 minutes or until onion is translucent

Add 4 cups shredded cabbage, thinly sliced apple, 2 tbsp apple cider vinegar, 2 tbsp water and a pinch of salt.

Cover pot and stir occasionally, adding additional water if there is no moisture left. Cook until cabbage is very tender, about 30 minutes.

Season with additional salt, vinegar or black pepper if desired
