I am guilty of being one of those people who tries something at a restaurant and thinks “I could make this”. I have been this way since I was little and I think one of the first recipes I ever did this with was cucumber salad! It’s such a nostalgic memory… I even remember the bowls I used.
This was always served as a freebie at my favorite thai food place in a teensy serving size. I always wanted more so I figured I might as well learn to make it. There really isn’t much to it but it’s a magic little salad and I think it pairs well with a lot of cuisines..not just Asian food!
Thinly slice cucumbers and onions
Roughly chop peanuts
Stir together white vinegar, rice vinegar, sugar, red pepper flakes, cilantro, and sesame oil
Add cucumbers, carrots, and onions
Top with chopped peanuts and cilantro
