cabbage arugula salad

I have been putting arugula in everything. I swear I am going to try to grow it soon but until then I will continue to buy out the grocery store. I think it makes this salad feel a little fancier than it actually is. It is super quick to throw together and because the dressing is pretty basic it goes with pretty much everything if you’re treating it as a side salad.

Cabbage and almonds both add different kinds of crunch, and cranberries bring a sweetness that the peppery arugula begs for.

If you are feeling lazy you can just use whatever vinaigrette you have in the fridge but I promise once you make your own you will never go back. The dressing recipe may yield more than you prefer on your salad, don’t over dress!

 3 cups shredded red cabbage
 4 cups loose packed arugula
 ¼ cup sliced almonds
 ¼ cup dried cranberries
vinaigrette
 ¼ cup olive oil
 1 tbsp red wine vinegar
 1 tsp dijon mustard
 1 pinch garlic power
 1 tsp brown sugar
 salt and pepper to taste

combine shredded cabbage, arugula, dried cranberries, and slivered almonds

In a separate bowl combine olive oil, red wine vinegar, dijon mustard, and brown sugar. Season to taste with garlic powder, salt and pepper

toss salad with dressing right before serving
