christmas dinner

I like a simple traditional christmas dinner. Tradition is different for everyone… but mine is spiral ham, potatoes, and brie.

Say what you will about spiral ham…it’s tradition! They come pre cooked so you really just have to heat them up and add a little flavor. I used a slow cooker so the oven would be free for other dishes.

Au gratin potatoes are rich and creamy and they go perfectly with ham. I used a mandolin to slice potatoes and onions as thin as I could. They are sure to be a crowd pleaser.

You will need a little green to go with this meal. I made a garlicky green beans with toasted pine nuts. Roasted asparagus or brussel sprouts would be nice sides as well.

When I was little there was always melted brie cheese served with apples, pears, crackers, and bread. It felt very luxurious because we would only have it around Christmas and New Years. These bites use cranberry sauce as the sweet component and they are insanely easy but still feel a little fancy.

 1 8 lb spiral cut ham
 ¾ cup brown sugar
 ¼ cup honey
 2 tbsp dijon mustard
 1 cup water

Mix together 3/4 cups brown sugar, 1/4 cup honey, 2 tbsp dijon mustard, and 1 cup of water. Place ham sliced side up and pour mixture over the top. Cook on low for 4 hours.

If you want a glaze just heat the leftover liquid in a saucepan over medium heat. Cook until thickened, pour glaze over ham.

 ½ medium onionsliced very thin
 3 tbsp butter
 3 tbsp flour
 2 cups milk
 1 ½ cups shredded cheddar cheese

Preheat oven to 400 degrees. Butter a 1 qt baking dish. Slice potatoes and onion very thin using a mandolin.

Layer 1/2 of potatoes in baking dish. Add a layer of thinly sliced onion. Top with remaining potatoes. Season with salt and pepper.

Over medium heat, melt 3 tbsp butter. Mix in 3 tbsp flour, stir constantly for about a minute. Add 2 cups milk, allow to thicken. Stir in cheese and continue stirring until cheese is melted.

garlic green beans with pine nuts

 ¼ cup pine nuts
 2 tbsp olive oil
 1 clove garlicminced
 1 tbsp lemon zest
 1 tbsp fresh chopped parsley

Add pine nuts to clean dry pan. Toast over medium heat for about 3 minutes or until golden. Remove from pan and reserve for later use.

Bring a large pot of water to a boil. Add green beans and cook until tender about 5-10 minutes and drain.

In a large saute pan add 2 tbsp olive oil over medium heat. Add minced garlic and cook for about 1 minute. Add green beans, 1 tbsp parsley, 2 tbsp fresh grated parmesan cheese, and toasted pine nuts. Remove from heat, top with 1 tbsp lemon zest.

Cook beans in a 4-quart saucepan of boiling salted water until just tender, about 5 minutes, then drain well in a colander. Transfer to a bowl and toss with nuts, parsley, zest, oil, and salt and pepper to taste.
