Everybody loves mashed potatoes! It’s holiday season and mashed potatoes are by far one of the most popular side dishes. Mashed potatoes are one of those things you don’t really need a recipe for… just add some dairy and fat to potatoes and voila!
These simple mashed potatoes are perfect for your Thanksgiving or Christmas meal, but easy enough for a weeknight. If I want something a little more special I like to add sour cream, cream cheese, chives, or garlic.
Peel and quarter potatoes. Bring a large pot of salted water to boil, add potatoes. boil about 15 minutes or until fork tender.
Drain and add potatoes to mixer. Stir on medium speed, add 1 stick softened butter and 1/2 cup milk Season with salt and pepper. Sprinkle with fresh parsley to garnish.
